Native Coloradan Paul Kukich, a four-year Tucson transplant, is hoping to roll out his BurgerRito food truck in the next week or two.

Kukich is waiting for his final health inspection to hit the streets and start dishing up a childhood favorite: Chubby’s original chili, with spicy Hatch Valley red chile powder, pork, green chiles and cheese — lots of cheese.

Like Chubby's, a legendary Mexican restaurant in Denver, Kukich will serve the chili atop a quarter-pound cheeseburger.

His menu also includes two types of breakfast burritos and chili cheese fries. The burritos, which start at $4.50 and go as high as $7.50, can be served plain or smothered in chili.

Kukich, who came to Tucson to be closer to his young daughter four years ago, has spent almost a year working on BurgerRito. He said he will rotate parking the truck at three locations: 5601 S. Palo Verde Road; 5000 E. Valencia Road; and 333 W. Drachman St.
