Phoenix restaurateur Aaron May is taking his fledgling The Lodge Sasquatch Kitchen concept to Sierra Vista.
He hopes to open late this month or in early April in a former My Big Fat Greek Restaurant at 4177 E. Highway 90 that was owned by May's longtime business partner Ryan Field.
"We really believe in the concept. It was kind of a culmination of a lot of things we were doing at the time," May said. "It's doing really well in Tucson and we've gotten a really great response."
May opened the first Lodge Sasquatch in late December in Field's closed My Big Fat Greek at Foothills Mall in Tucson. He spent several weeks remodeling it to look like a hunting lodge.
The Sierra Vista restaurant is undergoing a similar makeover that incorporates the wooden ceilings and stonework left over from the building's various restaurant incarnations.
"It will feel the same, but it won't look totally the same," May said Wednesday, two days after inspecting the project. "But it has a real cool, lodgy feel to it."
The concept builds on May's Scottsdale sports bar/restaurant, The Lodge, a lounge that serves a kicked-up menu including the signature Sasquatch burger - a behemoth bacon cheeseburger housed between a pair of grilled-cheese sandwiches.
The burger anchors the Lodge Sasquatch Kitchen menu, which includes sandwiches, salads, chops, steaks and a house-made lamb stew. May said the menu will include a stronger emphasis on chops and steaks to appeal to Sierra Vista.
May's Scottsdale-based company, Lettuce Turnip Beets, operates 13 restaurants throughout Arizona and in Colorado, including May's Counter Chicken & Waffles at East Speedway and North Country Club Road in Tucson and the popular breakfast diner Over Easy, which he hopes to bring to Tucson soon.
Before the year is out, May said, he will open another restaurant in Tucson and one in Flagstaff.
